ΙN THE COURSE OF TIME
We produce with knowledge, imagination and passion
i was born in Melbourne, Australia and came back from a young age. Since then I live permanently in the city of Veria with my husband and our three children.
I graduated from the School of Agriculture of the Aristotle University of Thessaloniki and since then I have been practicing the profession of agriculturist, specializing in viticulture. At the same time, in 2007 I received a Master's Degree in Environmental Design. From 1992 to 2010 I worked in the company BOUTARI J. AND SON Winery S.A. as head of viticulture in Northern Greece, and was responsible for the cultivation and quality of the grapes not only of the then proprietary properties of the company but also of its many viticulturalsuppliers. My surveillance zones were the viticultural zones of Naousa, Goumenissa and Amynteo.
In this context, the subjects and clones of the variety, the planting distances, the stem wall height, the irrigation, the plant protection and the productivity limits of the xinomavro variety as well as the rest of the existing varieties werea daily part of my professional realm.
So in this xinomavro triangle (Naousa-Goumenissa-Amynteo) I worked and learned the specific variety. Of course, a contributing factor to this was my continuous training and collaboration with the Department of Agriculture of the Aristotle University of Thessaloniki, the Agricultural University of Athens, the National Interprofessional Organization of Wine and Vine as well as with the French National Institute for Agricultural Research (INRA).
From the vineyard to the bottle…
In an attempt to adapt the foreign varieties to Naousa’s soils, I planted the Montepulciano variety in a small proprietary vineyard. The initial reasoning behind it was the improvement of the wine produced from the xinomavro variety with the use of the specific foreign variety. Later on, however, it seemed that it could just as well rise to the occasion on its own giving us, perhaps, the only single Montepulciano wine variety in Greece, namely Anemolia. Anemolia in Homeric language stands for the empty, futile, inane and vacuoustalk we say in moments of relaxation.
My long experience and knowledge of the xinomavro variety led me to the planting of my own vineyard in the viticultural zone of Protected Designation of Origin of Naousa, in order for us to make the most out of xinomavro. The xinomavro variety is a noble variety and many attribute to it the nickname of the queen of the North. This is because its cultivation is characterized by particular difficulties, as deep knowledge is required in order to achieve the best possible result. My long experience and knowledge of the xinomavro variety led me to the planting of my own vineyard in the viticultural zone of Protected Designation of Origin of Naousa, in order for us to make the most out of xinomavro. Nevertheless, having worked on it in depth and for many years, I managed to achieve the vinification of my own xinomavro.
I work on a small scale and select plants from viticulturists - partners that are monitored throughout the year. These plants, which are spots in each vineyard are marked and harvested separately from the rest of the vineyard. The grapes come from seven different vineyards, including the proprietary vineyard. So, the seven vineyards are the 7 klidia (klidia in Greek stands for keys) that unlock this unique variety, the xinomavro. Consequently, the number of bottles per year remains low.I work on a small scale and select plants from viticulturists - partners that are monitored throughout the year. Trying to highlight the local Naoussa variety, Prekniariko, I proceeded to blend it with the Malagouzia variety. The 7 kimata(kimata in Greek stands for waves)are the result of this effort. Its name is indicative of the difficulties I encountered until the first bottling.Trying to highlight the local Naoussa variety, Prekniariko, I proceeded to blend it with the Malagouzia variety. The latest vinification of xinomavro is 7 onera (onera in Greek stands for dreams), a wine that although born during the pandemic, it nevertheless alludes to our dreams, which despite the difficulties remain unaffected and always alive. The latest vinification of xinomavro is 7 onera (onera in Greek stands for dreams), a wine that although born during the pandemic, it nevertheless alludes to our dreams, which despite the difficulties remain unaffected and always alive.
I am one of the small winemakers. However, a deep knowledge of the Greek vineyard and mainly the love and respect for the authentic Greek wine are included in the total of 10,000 bottles.I am one of the small winemakers. The response of oinophiles from Greece and abroad as well as the first exports to award-winning restaurants in Italy and Australia give me the strength and courage to continue creating and doing with passion and imagination what I love.
